It’s because we only use Gold Band oysters, which use a high-pressure sanitization process that eliminates harmful bacteria, all while preserving the flavor you love. A New Orleans staple, po’boys are known for their simple, hearty goodness. Sure, you’ve had po’boys with fried shrimp or catfish, but what about fried oysters? Tricky Fish does the Fried Oyster Po’Boy right, serving ours with fried oysters, lettuce, tomato, our house bacon jam, tartar sauce, pickles, and onions on a soft French bread loaf.
