Angel’s Envy Port Finish Bourbon

Angel’s Envy finishes strong, adding unique flavor profiles to its bourbon by finishing each batch in port barrels or rum casks. We absolutely love the port barrel finish, done in French Oak barrels imported from Portugal for a flavor all its own. This copper spirit will offer hints of vanilla, fruit, maple, and toasted nuts.

 

Amador Double Barrel Bourbon

In the same vein as the Angel’s Envy, we love Amador Double Barrel bourbon because it is also finished in a unique way – with Napa Valley wine barrels. The term “double barrel” comes into play because the bourbon starts in Kentucky, barreled there in American charred oak for 3.5 years. While the boubon would be great as-is, this double barrel process is only complete after phase 2: a trip to California to age for 6 months more in Chardonnay French oak barrels. This bourbon is sugar and spice and everything nice – and needs to be on your “must try” list.

 

Woodford Reserve Distiller’s Select

If you’re looking for a subtle, starter sippin’ whiskey, then Woodford Reserve’s Distiller’s Select should certainly make the list. It’s very pleasant for sippin’ straight, with hints of honey, vanilla, tobacco, and even pepper intermingled to perfection.

Handheld Meal

Legend has it the po’boy was originated as a “meal” given to “poor boys” who were on strike from the railroad, and one of the original draws was that it was a complete meal in a compact, handheld package. And even today, what’s not to love about meat, cheese, veggies, and bread all rolled into a perfectly delicious package?! We serve ours with lettuce, tomato, onion, pickles, and sauce with fries or slaw on the side.

 

Variety

Not all po’boys are created equal. At Tricky Fish, we offer a variety of po’boys to keep it interesting. Our roots are southern, and we take old recipes from Louisiana – many with Cajun and Creole roots – and give them a new twist. For example, you probably wouldn’t find bacon jam on the original fried oyster po’boys of New Orleans, but it’s a fantastic addition to our Fried Oyster B.L.T. po’boy.

5 Oyster Myths That Just Aren’t True

We’ve learned over the years that there are many oyster myths swirling around out there – most of which just aren’t true! If you’re an oyster lover, Tricky Fish is here to set the record straight with 5 oyster myths that have been debunked by the FDA:

 

Myth #1: If you’re a seasoned oyster lover, then you’ll be able to tell if the oyster is good or bad.

 

It just isn’t that simple! Sure – if an oyster smells bad, then no establishment should be serving it. But the truth is, that there can still be harmful bacteria in an oyster that cannot be smelled, seen, or tasted. That’s why you should only consume oysters from restaurants that you trust with the highest quality standards like Tricky Fish! 

 

Myth #2: As long as the oyster didn’t come from polluted water, it is safe to eat. 

 

We hope you aren’t eating anything from polluted water! Most oysters in this area come from the Gulf of Mexico, which is freshwater, but can still have contaminants. Why? Because the bacteria that can wreak havoc thrives in warm water – not polluted water. 

 

Myth #3: Drink alcohol at the same time; it will kill harmful bacteria.

 

No. Whoever came up with this had good intentions, but it simply isn’t true. It doesn’t work like that in your gut.

 

Myth #4: Pour hot sauce all over your oysters and it will kill bacteria.

 

Again, no. Hot sauce comes from peppers and has no ability to kill harmful bacteria. Oysters must be processed at ultra-high temperatures to remove harmful bacteria that could be present. 

 

Myth #5: Just a couple bad oysters won’t hurt you.

 

Sadly, there have been cases where death has occurred after as few as 3 bad oysters. Many factors can go into play, so don’t even mess with an oyster that has a chance of being bad.

What are Prohibition Era Cocktails?

Prohibition Era cocktails are those that would have been served in the “old style,” hidden away in a swanky speakeasy. Examples may include an Old Fashioned, French 75, Gin Rickey, Southside, and more. Gin was a staple during the Prohibition Era, and a key ingredient in the best cocktails in all the land. 

 

We particularly love ROXOR gin because it is Texas gin, and we love supporting local. They call themselves the gin that got its “inspiration from Austin, recipe from Houston, and is distilled in Dallas.” Each sip is smooth and balanced, and why wouldn’t it be?! – the recipe was curated by a chef who also happens to have a PhD in Bio-Chemistry! 12 different botanicals are involved in the process of making this delicious gin, perfect for old style cocktails.

The Prohibition Era Cocktail Class will take place from 7-9pm on Dec. 5th, which is fitting since that was National Repeal Day, the day the 21st Amendment was ratified, allowing the sale of alcohol once again in America.

What Makes Our Mac & Cheese so Great?!

Since we opened our doors at Tricky Fish in 2016, the Tillamook Macaroni & Cheese has graced our menu and been met with the applause of many. We love that guests return time and time again and order this delectable comfort food. But why the popularity? What makes it so great? Here are a few thoughts on the matter…

 

It’s Tillamook After All.

 

Let’s face it. Tillamook is delicious. It’s stellar cheese, and it’s why we use it in our mac and cheese. Its creaminess when in melts and the pure intensity of the cheddar are both reasons why we love the flavor and texture it adds to our dish. Many customers rave that the creaminess of the dish is perfect, plus we add a little grated cheese on top to caramelize. Frankly, you had me at Tillamook. 

 

Cavatappi Pasta.

 

There is something about the noddle shape that can enhance a dish, and we definitely think this is true with our mac and cheese. We use cavatappi pasta; those fun, cylindrical corkscrew noodles that somehow find a way to lock-in all the flavors of the cheese. Plus – they are just fun to eat.
